Ingredients

  • 1 head Garlic
  • 2 teaspoons Olive oil
  • 0.5 cups Buttermilk
  • 0.25 cups Mayonnaise
  • 0.25 cups Greek yogurt (plain)
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 1 tablespoon Chives (finely chopped, optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic head to expose the tops of the cloves. Place the garlic head on a small sheet of aluminum foil, drizzle with olive oil, and wrap tightly.

Roast in the preheated oven for 30 minutes, or until the garlic cloves are soft and golden brown. Remove from the oven and allow to cool.

Once cooled, squeeze the roasted garlic cloves out of their skins into a mixing bowl, discarding the skins.
