Preheat your oven to 375°F (190°C). Grease a baking dish large enough to fit both Cornish hens.
Pat the Cornish hens dry with paper towels and season the cavity of each bird with a pinch of salt and black pepper. Brush the outside with 1 tablespoon of olive oil and season with paprika, additional salt, and pepper. Set aside.
