Ingredients

  • 2 whole Cornish game hens
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter, softened
  • 4 cloves Garlic, minced
  • 1 tablespoon Rosemary, fresh and chopped
  • 1 tablespoon Thyme, fresh and chopped
  • 1 whole Lemon, halved
  • 4 whole Carrots, peeled and cut into chunks
  • 6 whole Red potatoes, quartered
  • 1 whole Onion, cut into thick wedges
  • 1 cup Chicken stock

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the Cornish game hens inside and out under cold water, then pat them dry with paper towels.

Step 3

Season the hens generously with salt and black pepper, both inside the cavity and on the outside.

Step 4

In a small bowl, mix together the olive oil, softened butter, minced garlic, chopped rosemary, and thyme.

Step 5

Rub the butter mixture over the entire surface of the hens, ensuring to get under the skin for maximum flavor.

Step 6

Stuff each hen cavity with half a lemon.

Step 7

Arrange the carrots, red potatoes, and onion wedges in a large roasting pan. Drizzle with olive oil and toss to coat evenly. Season with salt and pepper.

Step 8

Place the prepared Cornish game hens on top of the vegetables in the roasting pan, breast side up.

Step 9

Pour the chicken stock into the bottom of the roasting pan to keep the vegetables moist and to create a flavorful base for a potential gravy.

Step 10

Roast the hens in the preheated oven for about 50-60 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).

Step 11

Halfway through cooking, baste the hens with the pan juices for additional flavor and to ensure golden, crispy skin.

Step 12

Once cooked, remove the roasted hens from the oven and let them rest for 10 minutes before carving.

Step 13

Serve the hens alongside the roasted vegetables for a hearty and delicious meal.
