Ingredients

  • 2 pieces Chicken breast
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 2 small Zucchini
  • 1 cup Ricotta cheese
  • 0.5 teaspoons Garlic powder
  • 1 teaspoon Lemon zest
  • 0.25 cup Fresh basil leaves
  • 4 slices Focaccia bread
  • 1 cup Arugula

Directions

Step 1

Preheat your oven to 400°F (200°C).

Season the chicken breasts on both sides with 1 teaspoon of salt and 0.5 teaspoon of black pepper.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
