Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 4 cloves Fresh garlic cloves, minced
  • 2 pieces Jalapenos, thinly sliced
  • 2 cups Cherry tomatoes, halved
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken breasts dry with paper towels and place them on a cutting board. Sprinkle both sides of the chicken evenly with salt, black pepper, ground cumin, and smoked paprika.

Step 3

Heat 2 tablespoons of olive oil in a large oven-proof skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown, but not cooked through. Remove the chicken from the skillet and set aside.

Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil to the skillet, followed by the minced garlic and sliced jalapenos. Sauté for 1-2 minutes until fragrant.
