Ingredients

  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil

  • 12 ounces penne or spaghetti pasta
  • 4 cups fresh spinach
  • 0.5 cups Asiago cheese, grated
  • 0.25 cups fresh basil leaves
  • 0.25 teaspoons red pepper flakes

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Place the cherry tomatoes on the baking sheet and drizzle with 2 tablespoons of olive oil. Add the minced garlic, salt, black pepper, and Italian seasoning, then toss to coat evenly.

Roast the cherry tomatoes in the preheated oven for 20 minutes, or until they are soft and slightly caramelized.
