Ingredients

  • 1 head cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon paprika

  • 4 cups arugula
  • 1 cup cherry tomatoes
  • 0.5 medium red onion
  • 0.25 cup slivered almonds
  • 0.5 cup feta cheese
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 tablespoon red wine vinegar
  • 1 clove garlic

Directions

Step 1

Preheat your oven to 425°F (220°C).

Cut the cauliflower into small florets and place them on a baking sheet.

Drizzle the cauliflower florets with 2 tablespoons of olive oil and sprinkle with paprika, ground cumin, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Toss to coat evenly.
