Ingredients

  • 1 head cauliflower
  • 6 cloves garlic
  • 1 medium yellow onion

  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro
  • 1 tablespoon lime juice

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Cut the cauliflower into florets and peel the garlic cloves. Arrange the cauliflower and garlic on the baking sheet.

Drizzle 2 tablespoons of olive oil over the cauliflower and garlic. Toss to coat evenly, then spread everything into a single layer.
