Ingredients

  • 1 lb Brussels sprouts
  • 4 slices Thick-cut bacon
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 whole Lemon
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2

Wash and trim the Brussels sprouts by removing any yellow or damaged outer leaves. Slice each sprout in half lengthwise.

Step 3

Slice the bacon into small, bite-sized pieces using a sharp knife.

Step 4

Spread the trimmed Brussels sprouts and bacon pieces evenly on the prepared baking sheet.

Step 5

Drizzle the Brussels sprouts and bacon with olive oil. Sprinkle with salt and black pepper, then toss until evenly coated.

Step 6

Arrange the Brussels sprouts in a single layer, cut-side down, for maximum caramelization during roasting.

Step 7

Place the baking sheet in the oven and roast for 20–25 minutes, stirring halfway through to ensure even cooking. The sprouts should be tender on the inside and crispy on the outside, while the bacon should be browned and crispy.

Step 8

In the meantime, zest the lemon using a microplane or fine grater, and then cut the lemon in half to juice it. Set aside both the zest and juice.

Step 9

Once the Brussels sprouts are roasted, remove the baking sheet from the oven. Immediately sprinkle the lemon zest over the sprouts and bacon, and drizzle with lemon juice to taste.

Step 10

Transfer to a serving dish and, if desired, garnish with fresh parsley for a pop of color and added freshness.

Step 11

Serve warm and enjoy!
