Ingredients

  • 500 g Brussels sprouts
  • 200 g Mushrooms (button or cremini, sliced)
  • 150 g Bacon (thick cut, diced)
  • 3 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 1 tsp Fresh thyme leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 30 g Parmesan cheese (optional, grated)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the Brussels sprouts, trim the ends, and cut them in half. Place them in a large mixing bowl.

Step 3

Add the sliced mushrooms to the bowl with the Brussels sprouts.

Step 4

In a large skillet over medium heat, cook the diced bacon until crispy. Use a slotted spoon to transfer the bacon to a plate lined with paper towels, and reserve the rendered bacon fat.

Step 5

Add 2 tablespoons of olive oil to the mixing bowl holding the Brussels sprouts and mushrooms. Pour in 1 tablespoon of reserved bacon fat for added flavor.

Step 6

Add the minced garlic, fresh thyme, salt, and black pepper to the bowl. Toss everything until the vegetables are well coated.

Step 7

Spread the Brussels sprouts and mushrooms in a single layer on a large baking sheet. Ensure they are not overcrowded for even roasting.

Step 8

Roast in the preheated oven for 20-25 minutes, flipping the vegetables halfway through, until they are golden brown and tender.

Step 9

Remove the baking sheet from the oven and transfer the roasted vegetables to a serving dish.

Step 10

Top with the crispy bacon bits and, if desired, sprinkle grated Parmesan cheese over the dish for added richness.

Step 11

Serve warm as a flavorful side dish and enjoy!
