Ingredients

  • 3 medium-sized beets
  • 6 cups baby spinach
  • 4 oz goat cheese
  • 1 cup pecans
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the beets thoroughly, trim the stems, and wrap each beet individually in aluminum foil.

Step 3

Place the wrapped beets on a baking sheet and roast in the oven for 40-45 minutes, or until a knife or skewer can easily pierce through the center of each beet.

Step 4

While the beets are roasting, prepare the pecans. Toast them in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until they are fragrant. Remove from the heat and set aside to cool.

Step 5

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper to make the dressing. Adjust the seasoning to taste, if needed.

Step 6

Once the beets are roasted, allow them to cool slightly, then peel off the skins by rubbing them gently with a paper towel. Cut the peeled beets into bite-sized cubes.

Step 7

In a large salad bowl, combine the baby spinach, roasted beet cubes, crumbled goat cheese, and toasted pecans.

Step 8

Drizzle the salad with the prepared dressing and toss gently to combine.

Step 9

Serve immediately and enjoy your Roasted Beet Spinach Goat Cheese Mix!
