Ingredients

  • 4 medium Beets
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt

  • 6 cups Mixed salad greens
  • 0.25 cups Orange juice (freshly squeezed)
  • 1 teaspoons Orange zest
  • 1 tablespoons Honey
  • 1 teaspoons Dijon mustard
  • 1 tablespoons White wine vinegar
  • 0.5 cups Goat cheese (optional)
  • 0.25 cups Pistachios or walnuts (optional, chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the beets thoroughly and trim off any leafy tops. Wrap each beet loosely in aluminum foil and place on a baking sheet.

Roast the beets in the oven for 45-50 minutes, or until they can be easily pierced with a fork.
