Ingredients

  • 4 medium Beets
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 6 cups Mixed greens
  • 0.5 cups Feta cheese
  • 0.25 cups Greek yogurt
  • 1 tablespoon Fresh lemon juice
  • 1 clove Garlic
  • 1 tablespoon Fresh dill
  • 1 teaspoon Honey
  • 0.25 cups Chopped walnuts

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Scrub the beets clean and remove any stems. Wrap each beet individually in aluminum foil.

Step 3

Place the wrapped beets on a baking sheet and roast in the oven for 40-45 minutes, or until a knife easily pierces through the center.

Step 4

While the beets are roasting, prepare the feta dressing. In a small bowl, combine the feta cheese, Greek yogurt, lemon juice, minced garlic, dill, and honey. Mix well until smooth and creamy. Set aside.

Step 5

Once the beets are done roasting, allow them to cool slightly. Unwrap the foil and use a paper towel to gently rub off the skins.

Step 6

Slice the cooked beets into wedges or rounds, depending on your preference.

Step 7

In a large salad bowl, add the mixed greens. Arrange the beet slices on top.

Step 8

Drizzle the feta dressing over the salad and toss gently to combine.

Step 9

Sprinkle the chopped walnuts over the salad for added crunch.

Step 10

Serve immediately and enjoy this vibrant, flavorful salad!
