Ingredients

  • 3 medium beets
  • 2 tablespoons extra virgin olive oil
  • 0.5 small red onion
  • 1 teaspoon orange zest
  • 1 tablespoon orange juice
  • 0.5 cup feta cheese
  • 2 tablespoons fresh parsley
  • 1 teaspoon balsamic vinegar
  • 1 large baguette
  • 1 large garlic clove
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and trim the beets, wrapping each one individually in aluminum foil. Place the wrapped beets onto a baking sheet and roast in the oven for 40-50 minutes, or until they are fork-tender.

Step 3

While the beets are roasting, thinly slice the baguette into 1/2-inch rounds. Arrange the slices on a baking sheet and drizzle them lightly with 1 tablespoon of olive oil. Toast in the oven for 8-10 minutes, or until golden and crisp. Rub one side of each toasted slice with the cut side of the garlic clove for flavor. Set aside.

Once the beets are tender, remove them from the oven. Allow them to cool slightly, then peel off the skins using your hands or a paper towel. Be careful, as the beets can stain easily.

Dice the peeled beets into small cubes and place them in a mixing bowl.
