  • 8 oz chorizo sausage, casing removed

  • 2 celery stalks, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 2 cups dried breadcrumbs
  • 1 cup chicken stock
  • 1 lemon, halved

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Prepare the turkey by patting it dry with paper towels, then rubbing the entire surface and inside the cavity with 1 tablespoon of salt and 1 tablespoon of black pepper.

Step 3

In a skillet over medium heat, add the olive oil and cook the chorizo for 5-7 minutes, breaking it up into small pieces with a wooden spoon.

Add the onion, celery, and garlic to the skillet and sauté for 3-4 minutes until soft and fragrant.
