Ingredients

  • 12 lbs Whole turkey
  • 1 cup Unsalted butter
  • 2 tbsp Salt
  • 1 tbsp Black pepper
  • 2 tbsp Fresh rosemary
  • 2 tbsp Fresh thyme
  • 1 cup Apricots (dried, chopped)
  • 0.5 cup Grand Marnier
  • 6 cups Day-old bread (cubed)
  • 1 cup Chicken stock
  • 1 large Yellow onion (finely chopped)
  • 2 stalks Celery (finely chopped)
  • 1 large Carrot (finely chopped)
  • 3 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • 2 tbsp Parsley (chopped)
  • 1 tsp Orange zest

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the giblets from the turkey cavity, rinse the bird inside and out with cold water, and pat it dry with paper towels.

Step 3

In a small bowl, mix together softened butter, salt, black pepper, chopped rosemary, and thyme.

Step 4

Gently lift the skin of the turkey and massage the herb butter evenly under the skin and over the surface of the bird.

Step 5

Heat olive oil in a skillet over medium heat. Add chopped onion, celery, carrot, and minced garlic. Cook until soft and fragrant (about 5 minutes).

In a large mixing bowl, combine diced apricots, Grand Marnier, cubed bread, cooked vegetable mixture, chicken stock, parsley, and orange zest. Mix gently until well combined.

Place the prepared turkey breast-side up in a large roasting pan on a roasting rack.

Roast the turkey in the preheated oven, basting with pan juices every 30 minutes, for approximately 15 minutes per pound or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).

If the turkey skin begins to brown too quickly, cover it loosely with aluminum foil during roasting.

Once fully cooked, remove the turkey from the oven and let it rest, tented with aluminum foil, for 20-30 minutes before carving.

Step 12

Transfer the stuffing from the turkey cavity to a serving dish, and carve the turkey. Serve hot with your favorite sides.
