  • 2 lbs russet potatoes
  • 1 cup whole milk
  • 4 tablespoons unsalted butter
  • 6 stalks green onions (scallions)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil it.

Rinse the snapper thoroughly under cold water and pat dry with paper towels. Score the fish on both sides with shallow diagonal slits, about 1 inch apart.
