  • 4 pounds Pork loin roast
  • 4 sprigs Fresh rosemary
  • 6 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 1 cup Chicken broth
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the pork loin roast dry with paper towels. Using a sharp knife, score the fat cap lightly in a crosshatch pattern.

In a small bowl, combine salt, black pepper, and olive oil to create a rub. Rub this mixture all over the pork.
