Ingredients

  • 4 pounds boneless pork loin roast
  • 2 teaspoons salt
  • 1 teaspoons black pepper
  • 1 teaspoons ground sage
  • 4 tablespoons unsalted butter
  • 2 large yellow onions, finely chopped
  • 2 stalks celery stalks, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 2 cups breadcrumbs
  • 1 cup chicken stock
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin roast dry with paper towels. Rub 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1/2 teaspoon of sage all over the surface of the pork. Set it aside to rest while preparing the stuffing.

Step 3

In a skillet, melt the butter over medium heat. Add the chopped onions and celery, and sauté for 5-7 minutes until they become soft and translucent.

Step 4

Stir in the minced garlic, parsley, and thyme, cooking for an additional 2 minutes until fragrant.

Step 5

Remove the skillet from the heat and stir in the breadcrumbs until well combined. Gradually add chicken stock, stirring to make the stuffing moist but not overly wet. Season with the remaining salt and pepper.

Step 6

Using a sharp knife, cut a 1-inch-deep pocket along the length of the pork loin to create room for the stuffing. Be careful not to cut all the way through.

Step 7

Stuff the prepared onion mixture into the pocket of the pork loin. Use kitchen twine to secure the roast tightly, ensuring that the stuffing stays in place.

Step 8

Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat. Sear the pork roast on all sides until browned, about 3-4 minutes per side.

Step 9

Transfer the skillet or roasting pan to the preheated oven and roast for approximately 1 hour and 30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 10

Remove the pork from the oven and let it rest for 15 minutes before carefully slicing into thick rounds to serve.

Step 11

Garnish with additional chopped parsley if desired and serve hot with your favorite sides.
