  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Trim any excess fat from the pork loin and pat it dry with paper towels.

Step 3

In a small bowl, combine the Dijon mustard, whole grain mustard, minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper. Mix well to create a paste.

Place the pork loin on a roasting pan fitted with a rack, fat side up.
