Pat the pork loin roast dry with paper towels and rub it all over with 1 tablespoon of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper.
Peel and lightly crush 4 garlic cloves, leaving them whole. Mince the remaining 4 cloves and set aside.
In a large oven-safe skillet or roasting pan, heat 1 tablespoon of olive oil over medium-high heat. Add the pork loin and sear it on all sides until golden brown, about 2-3 minutes per side. Remove the pork and set aside.
