Ingredients

  • 1.5 kg Boneless pork loin
  • 150 g Stilton cheese
  • 100 g Fresh spinach leaves
  • 2 cloves Garlic cloves, minced
  • 2 tbsp Olive oil
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Butter, softened
  • 1 roll Kitchen string

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Butterfly the pork loin by making a horizontal cut lengthwise, stopping just short of cutting through so the meat can be opened like a book.

Step 3

Layer the spinach leaves evenly across the opened pork loin.

Step 4

Crumble the Stilton cheese over the spinach layer.

Step 5

Sprinkle the minced garlic evenly over the cheese.

Step 6

Carefully roll the pork loin back up, ensuring the stuffing remains tightly packed inside.

Step 7

Use kitchen string to tie the rolled pork loin firmly at regular intervals to hold its shape.

Step 8

Rub the outside of the pork with olive oil, then season all over with salt, pepper, and chopped rosemary.

Step 9

Place the pork in a roasting pan and spread the softened butter on top of the roll to help with browning.

Step 10

Roast the pork in the preheated oven for 70-90 minutes, or until the internal temperature reaches 63°C (145°F) using a meat thermometer.

Step 11

Remove the pork from the oven, cover it with foil, and let it rest for 10-15 minutes before slicing.

Step 12

Slice the rolled pork loin into thick, even rounds and serve immediately for a stunning centerpiece dish.
