Preheat your oven to 375°F (190°C).
Season the pork loin all over with 2 teaspoons of salt and 1 teaspoon of black pepper.
Heat 2 tablespoons of olive oil in a large ovenproof skillet or roasting pan over medium-high heat. Sear the pork loin on all sides until golden brown, about 3-4 minutes per side. Remove the pork from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for 1 minute until fragrant.
Add the chicken broth to the skillet and scrape the bottom with a wooden spoon to deglaze the pan and release any browned bits. Remove from heat.
Peel, core, and slice the apples into wedges. Cut the potatoes into 1-inch chunks.
