  • 4 lbs Whole chicken
  • 1.5 tbsp Salt
  • 1 tsp Black pepper
  • 3 tbsp Butter, unsalted
  • 2 tbsp Olive oil
  • 2 sprigs Fresh rosemary
  • 4 Garlic cloves, peeled and smashed
  • 1 Orange, sliced
  • 1.5 cups Grand Marnier liqueur
  • 0.5 cup Orange juice, fresh
  • 3 tbsp Honey
  • 2 tsp Cornstarch
  • 2 tbsp Water

Directions

Step 1

Preheat your oven to 425°F (220°C).

Pat the whole chicken dry with paper towels. Season the inside and outside generously with salt and black pepper.

In a small bowl, mix together the butter and olive oil. Rub this mixture all over the chicken, ensuring it gets into all crevices.

Stuff the cavity of the chicken with the rosemary sprigs, smashed garlic cloves, and orange slices.
