Ingredients

  • 1 piece whole chicken (approximately 4 pounds)
  • 3 tablespoons olive oil
  • 1 piece lemon
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup dried apricots
  • 1 cup dried figs
  • 0.5 cup golden raisins
  • 0.5 cup slivered almonds
  • 2 tablespoons honey
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup chicken broth
  • 2 tablespoons fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the chicken under cold running water and pat dry with paper towels. Ensure the cavity is clean and free of any giblets.

Step 3

Rub the chicken all over with 2 tablespoons of olive oil, then season generously with salt and black pepper, including inside the cavity.

Cut the lemon in half and place both halves inside the chicken cavity for added flavor and moisture.

In a medium bowl, combine the dried apricots, dried figs, golden raisins, slivered almonds, honey, ground cinnamon, 1 tablespoon of olive oil, and the chicken broth. Mix well to coat the dried fruits and almonds in the broth mixture.

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
