Ingredients

  • 1 cup White rice (short or medium grain)
  • 4 cups Whole milk
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 2 large Egg yolks
  • 0.5 cup Heavy cream
  • 1 tablespoon Unsalted butter
  • 0.25 cup Raisins (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear, then drain thoroughly.

Step 2

In a medium saucepan, combine rinsed rice, whole milk, sugar, salt, and cinnamon. Stir well to combine.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent the rice from sticking.

Step 4

Reduce the heat to low and simmer uncovered for about 35–40 minutes, stirring often, until the rice is tender and the mixture has thickened to a creamy consistency.

Step 5

In a small mixing bowl, whisk the egg yolks and heavy cream together until smooth. Temper the egg mixture by slowly adding a few spoonfuls of the hot rice pudding mixture to it, whisking constantly to avoid curdling.

Step 6

Slowly pour the egg mixture back into the saucepan, stirring continuously. Cook over low heat for an additional 5 minutes, allowing the pudding to thicken further.

Step 7

Remove the saucepan from heat and stir in the vanilla extract and butter until fully incorporated. If using raisins, stir them in at this stage.

Step 8

Let the pudding cool slightly before serving. For a chilled version, transfer the rice pudding to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and refrigerate for at least 2 hours.

Step 9

Serve warm or cold, garnished with a sprinkle of cinnamon or a dollop of whipped cream, if desired.
