Ingredients

  • 3 medium-sized zucchini
  • 2 large carrots
  • 1 large russet potato
  • 1 large yellow onion
  • 4 large eggs
  • 0.75 cup all-purpose flour
  • 0.25 cup olive oil
  • 1 teaspoon baking powder
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 1 tablespoon neutral oil (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with neutral oil and set aside.

Step 2

Using a box grater or food processor, shred the zucchini, carrots, and potato. Place the shredded vegetables in a large mixing bowl.

Step 3

Finely chop or grate the yellow onion and add it to the bowl with the other vegetables.

Step 4

In a separate bowl, lightly whisk the eggs, then add the all-purpose flour, olive oil, baking powder, salt, black pepper, paprika, and garlic powder. Stir until well combined to form a thick batter.

Step 5

Pour the batter over the vegetable mixture and mix thoroughly until the vegetables are evenly coated.

Step 6

Transfer the vegetable batter into the greased baking dish, spreading it out evenly and pressing down lightly to compact the mixture.

Step 7

Bake in the preheated oven for 60 minutes, or until the kugel is golden brown on top and a knife inserted into the center comes out clean.

Step 8

Allow the kugel to cool for 10–15 minutes before slicing into squares or wedges. Serve warm or at room temperature.
