Ingredients

  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 2 tablespoons water
  • 6 cups chicken broth
  • 2 tablespoons butter
  • 1 medium, finely chopped onion
  • 1 large, diced carrot
  • 1 diced celery stalk
  • 2 cloves, minced garlic
  • 2 tablespoons, chopped fresh parsley
  • 0.5 teaspoon black pepper

Directions

Step 1

In a mixing bowl, combine the flour and salt.

Step 2

Whisk the egg with 2 tablespoons of water, then add it to the flour mixture.

Step 3

Stir until the dough comes together, then knead for 2-3 minutes until smooth and slightly firm. Cover with a towel and let it rest.

Step 4

In a large pot, melt the butter over medium heat.

Step 5

Add the chopped onion, carrot, celery, and garlic. Sauté for 5-7 minutes until the vegetables are softened.

Step 6

Pour in the chicken broth and bring to a gentle boil. Season with black pepper.

Step 7

Pinch off small pea-sized pieces of the rested dough and drop them one by one into the simmering broth. Alternatively, use a small spoon to shape the dumplings.

Step 8

Allow the dumplings to cook for 8-10 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust salt if needed.

Step 10

Serve hot, garnished with fresh chopped parsley.
