Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 packet onion soup mix
  • 1 cup panko breadcrumbs
  • 0.5 cup parmesan cheese, grated
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 2 pieces egg, beaten
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 as needed nonstick cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease it with nonstick cooking spray.

Step 2

Set up three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, combine the onion soup mix, panko breadcrumbs, parmesan cheese, paprika, garlic powder, and black pepper.

Step 3

Pat the chicken breasts dry with paper towels. If they are particularly thick, pound them to an even thickness using a meat mallet. This ensures even cooking.

Step 4

Coat each chicken breast first in the flour, shaking off any excess. Dip it into the beaten eggs, letting the excess drip off, and then press it firmly into the breadcrumb mixture to coat all sides. Repeat for all chicken breasts.

Step 5

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 2 minutes per side, or until golden brown. You’re not cooking the chicken through at this stage, just giving it color and a flavorful crust.

Step 6

Transfer the seared chicken breasts onto the prepared baking sheet. Bake in the preheated oven for 18-20 minutes or until the internal temperature reaches 165°F (74°C).

Step 7

Remove the chicken from the oven and let it rest for 5 minutes before serving.

Step 8

Serve hot with your choice of sides, such as mashed potatoes, steamed vegetables, or a crisp green salad. Enjoy!
