Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chives, finely chopped (optional for garnish)
  • 1 teaspoon pickle juice (optional for extra tang)

Directions

Step 1

Place the eggs in a single layer in a medium-sized saucepan and cover them with water. Ensure there's about 1 inch of water above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once it reaches a rolling boil, turn off the heat, cover the saucepan, and let the eggs sit for 10 minutes.

Step 3

After 10 minutes, carefully transfer the eggs to a bowl of ice water. Let them cool for 5-10 minutes to stop the cooking process and make peeling easier.

Step 4

Peel the eggs under running water to help remove the shells smoothly. Once peeled, gently slice each egg lengthwise and scoop out the yolks into a medium bowl. Place the egg whites on a serving tray.

Step 5

Mash the egg yolks with a fork until they are crumbly and smooth. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and (if using) pickle juice. Mix thoroughly until the consistency is creamy and well-blended.

Step 6

Use a spoon or a piping bag with a star tip to fill the cavities of the egg whites with the yolk mixture.

Step 7

Sprinkle the filled eggs lightly with paprika. Garnish with chopped chives if desired.

Step 8

Chill the deviled eggs in the refrigerator for at least 15-20 minutes before serving to allow the flavors to meld.

Step 9

Serve cold and enjoy Rita's zesty take on deviled eggs!
