Ingredients

  • 2 pieces chicken breasts (boneless, skinless)
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 0.5 cups chicken broth
  • 0.25 cups dry white wine
  • 3 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons capers (rinsed and drained)
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Begin by butterflying the chicken breasts. Place each chicken breast between two sheets of plastic wrap and pound gently with a meat mallet until approximately 1/2 inch thick.

Step 2

Season both sides of the chicken with salt and black pepper.

Step 3

Place the flour in a shallow dish and coat each piece of chicken evenly on both sides, shaking off excess flour.

Step 4

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.

Once hot, add the chicken to the skillet. Cook for 3-4 minutes on each side until golden brown and fully cooked. Remove the chicken and set aside on a plate.
