Step 1

Bring the sugar mixture to a boil over medium heat, without stirring further, to avoid crystallization. Use a candy thermometer to monitor the temperature, and heat the syrup to 240°F (soft ball stage). This typically takes about 7-10 minutes.

While the sugar syrup is heating, place the egg whites in a clean, grease-free mixing bowl. Add the cream of tartar to the egg whites.

Using an electric mixer with a whisk attachment, beat the egg whites and cream of tartar on medium speed until they form soft peaks. This takes about 2-3 minutes.

Once the sugar syrup reaches 240°F, immediately remove it from the heat and carefully pour the syrup into the whipped egg whites in a slow, steady stream while continuing to whisk on low speed. Be cautious as the syrup is extremely hot.
