  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.25 teaspoons Black pepper
  • 2 stalks Green onion, sliced

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a blender or food processor, combine the spinach, parsley, cilantro, garlic cloves, lime juice, and 1 cup of the vegetable broth. Blend until smooth. Set the mixture aside.
