Set your rice cooker to its sauté or equivalent function. Add olive oil and butter, and allow the butter to melt.
Once melted, add the diced pancetta and cook while stirring occasionally until it turns golden and crispy, about 3-4 minutes.
Add the diced onion and minced garlic to the rice cooker and sauté for 2-3 minutes, or until the onion becomes translucent and fragrant.
Add the Arborio rice to the rice cooker and stir to coat the grains with the fat. Toast the rice for about 1-2 minutes until slightly translucent around the edges.
Pour in the chicken or vegetable broth and stir well to combine all the ingredients. Close the lid of the rice cooker and set it to the white rice or risotto cooking setting.
