  • 8 large eggs
  • 0.25 cups whole milk

  • 0.5 cups red bell pepper, diced
  • 0.5 cups zucchini, diced
  • 1 cups baby spinach, chopped
  • 2 stalks green onions, sliced
  • 0.75 cups cheddar cheese, shredded
  • 12 pieces slider buns
  • 2 tablespoons butter (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced red bell pepper and zucchini, cooking for 3-4 minutes until softened.
