Ingredients

  • 1 pound ground beef
  • 0.5 pound ground pork
  • 1 small onion, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 0.5 cup corn kernels (fresh, frozen, or canned, drained)
  • 2 cloves garlic, minced
  • 1 cup Mexican blend shredded cheese
  • 0.25 cup cilantro, chopped
  • 2 large eggs
  • 0.75 cup panko breadcrumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 6-cup mini loaf pan with olive oil or non-stick spray.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, red bell pepper, and corn kernels.

Step 3

Add the minced garlic, shredded Mexican cheese, and chopped cilantro to the bowl and mix thoroughly.

Step 4

In a small bowl, whisk together the eggs, tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper until smooth.

Step 5

Pour the egg mixture into the meat and vegetable mixture, then sprinkle in the panko breadcrumbs. Mix using your hands or a spoon until everything is well incorporated but not overworked.

Step 6

Divide the mixture evenly among the 6 mini loaf compartments, pressing lightly to shape them into loaf forms.

Step 7

Place the mini loaf pan in the preheated oven and bake for 25 minutes, or until the loaves are browned on top and fully cooked (internal temperature should reach 160°F/71°C on a meat thermometer).

Step 8

Remove the pan from the oven and let the mini loaves rest for 5 minutes before carefully removing them.

Step 9

Serve warm, garnished with extra cilantro if desired, alongside your favorite sides such as a fresh salad, rice, or roasted vegetables.
