Ingredients

  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.5 cup jam or preserves (any flavor)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, using a hand or stand mixer, beat the unsalted butter, granulated sugar, and light brown sugar together on medium speed until light and fluffy, about 2-3 minutes.

Step 3

Add the vanilla extract and mix until well combined.

Step 4

Gradually add the all-purpose flour and salt to the butter mixture, mixing on low speed until just incorporated. The dough will be thick but should hold together when pinched.

Step 5

Roll the dough into 1-inch balls (you should get about 24) and place them 2 inches apart on the prepared baking sheets.

Step 6

Using your thumb or the back of a teaspoon, gently press an indentation into the center of each cookie. Be careful not to press all the way through.

Step 7

Fill each indentation with about 1/2 teaspoon of jam or preserves. Do not overfill to avoid spilling during baking.

Step 8

Bake the cookies in the preheated oven for 11-13 minutes, or until the edges are lightly golden. Rotate the baking sheets halfway through for even baking.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy your Riley's Thumbprint Cookies as a delightful treat, or store them in an airtight container at room temperature for up to 5 days.
