Ingredients

  • 500 grams beef sirloin (sliced into thin strips)
  • 2 large leeks (cleaned and sliced into thin rounds)
  • 3 pieces garlic cloves (minced)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 cup beef stock or water
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon ground black pepper
  • 0 salt (to taste)

Directions

Step 1

Begin by slicing the beef sirloin into thin strips against the grain for tenderness. Set aside.

Step 2

In a small bowl, mix the soy sauce, oyster sauce, and cornstarch, then add half of the measured beef stock or water. Stir until the cornstarch dissolves completely and forms a smooth sauce. Set aside.

Step 3

Heat a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the beef strips in batches to avoid overcrowding. Sear each batch for 2-3 minutes until lightly browned. Remove the beef and set aside.

Step 4

In the same wok, add the remaining 1 tablespoon of vegetable oil. Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 5

Add the sliced leeks to the wok and stir-fry for 2-3 minutes, or until they soften slightly.

Step 6

Return the seared beef to the wok. Pour in the pre-mixed sauce and the remaining beef stock or water. Stir to coat the beef and leeks evenly.

Step 7

Let the mixture simmer for 4-5 minutes, stirring occasionally, until the sauce thickens and coats the beef and leeks. Season with ground black pepper and salt to taste.

Step 8

Remove from heat and transfer to a serving dish. Serve hot over steamed rice or noodles, if desired.
