Ingredients

  • 400 g rigatoni pasta
  • 300 g spicy Italian sausage
  • 2 tbsp olive oil
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 tsp crushed red pepper flakes
  • 400 g canned crushed tomatoes
  • 100 ml heavy cream
  • 10 g fresh basil leaves
  • 10 g fresh parsley
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 50 g Parmesan cheese, grated

Directions

Step 1

Bring a large pot of salted water to a boil and cook the rigatoni according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Remove the sausage casings and crumble the sausage into the skillet. Cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Transfer the cooked sausage to a plate and set aside.

In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened and translucent.
