Ingredients

  • 12 oz Rigatoni pasta
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 cup Sun-dried tomatoes, julienned
  • 4 cups Kale, stems removed and chopped
  • 4 oz Goat cheese, crumbled
  • 1 cup Heavy cream
  • 0.25 cup Grated Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly cracked
  • 1 cup Pasta water, reserved

Directions

Step 1

Bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute, until fragrant.

Step 3

Stir in the julienned sun-dried tomatoes and cook for 2-3 minutes to release their flavor.

Step 4
