Ingredients

  • 1000 grams Potatoes
  • 1 medium Onion
  • 2 large Eggs
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Nutmeg (optional)
  • 200 milliliters Vegetable oil
  • 250 grams Apple sauce (for serving)

Directions

Step 1

Peel the potatoes and grate them using a coarse grater. Place the grated potatoes in a clean kitchen towel and squeeze tightly to remove as much liquid as possible.

Step 2

Peel and finely grate the onion. Combine the grated onion with the grated potatoes in a large mixing bowl.

Step 3

Crack the eggs into the bowl, then add the flour, salt, pepper, and nutmeg, if using. Mix well until all the ingredients are fully incorporated.

Step 4

Heat the vegetable oil in a large frying pan over medium-high heat. The oil should be hot but not smoking.

Step 5

Using a heaping tablespoon of the potato mixture, carefully place it into the hot oil and flatten it with the back of the spoon to form a pancake about 8-10 cm in diameter.

Step 6

Fry the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Work in batches, ensuring not to overcrowd the pan.

Step 7

Remove the cooked potato pancakes and place them on a plate lined with paper towels to drain excess oil.

Step 8

Serve the Rievkooche warm with a side of apple sauce, rye bread, or your favorite accompaniment.
