Ingredients

  • 2 pounds Beef chuck roast, cubed
  • 2 pounds Chicken thighs, boneless and skinless
  • 4 large Carrots, peeled and diced
  • 4 Celery stalks, diced
  • 4 medium Russet potatoes, peeled and cubed
  • 0.5 head Cabbage, coarsely chopped
  • 2 large Onion, diced
  • 2 cups Sweet corn kernels (frozen or fresh)
  • 28 ounces Tomatoes, canned and diced
  • 8 cups Beef or chicken stock
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • 2 tablespoons Vegetable oil

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large stockpot or Dutch oven over medium-high heat.

Step 2

Season the cubed beef chuck roast with salt and pepper, then sear in the pot until browned on all sides. Remove and set aside.

Step 3

Add another tablespoon of oil to the pot. Sear the chicken thighs until lightly browned, then remove and set aside with the beef.

Step 4

In the same pot, add the diced onions, carrots, and celery. Cook until softened and fragrant, about 5 minutes.

Step 5

Add the beef and chicken back to the pot, along with the diced tomatoes and beef or chicken stock. Stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, stirring occasionally.

Step 7

After 1 hour, add the potatoes, cabbage, corn, dried thyme, bay leaves, and additional salt and pepper to taste. Stir well.

Step 8

Simmer the bouja for another 1.5 to 2 hours, or until the meat is tender and the vegetables are fully cooked. Stir occasionally to ensure nothing sticks to the bottom.

Step 9

Remove bay leaves before serving. Taste and adjust seasoning if necessary.

Step 10

Ladle the bouja into bowls and serve hot with crusty bread or crackers on the side.
