Ingredients

  • 1 cup Part-skim ricotta cheese
  • 0.5 cup Walnuts
  • 1 clove Garlic
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Olive oil
  • 3 tablespoons Grated Parmesan cheese
  • 0.25 cup Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Toast the walnuts in a dry skillet over medium heat for 3-5 minutes, until fragrant. Be careful not to burn them. Remove from heat and let them cool.

Step 2

In a food processor, combine the walnuts, garlic, part-skim ricotta cheese, lemon juice, olive oil, grated Parmesan, water, salt, and black pepper.

Step 3

Blend the mixture until smooth and creamy. If the sauce is too thick, add an additional tablespoon of water, one at a time, until the desired consistency is reached.

Step 4

Taste the sauce and adjust the seasonings if needed.

Step 5

Cook your choice of pasta according to the package instructions. Reserve 1/4 cup of the pasta cooking water before draining.

Step 6

Toss the cooked pasta with the ricotta walnut sauce, adding a bit of the reserved pasta water as needed to help coat the pasta evenly.

Step 7

Serve immediately, garnished with chopped fresh parsley, if desired.
