Ingredients

  • 12 oz pasta (such as rigatoni or penne)
  • 8 oz Italian sausage (mild or hot, casings removed)
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 0.5 tsp crushed red pepper flakes (optional)
  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup reserved pasta cooking water
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta cooking water and drain the rest. Set the pasta aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it into small pieces with a wooden spoon, until browned and cooked through, about 5-7 minutes.

Step 3

Add the minced garlic and crushed red pepper flakes (if using) to the skillet and cook for 1 minute, stirring frequently to prevent burning.

Step 4

If desired, stir in the fresh spinach and cook until wilted, about 2 minutes.

In a small bowl, combine the ricotta cheese, grated Parmesan cheese, salt, and black pepper. Mix until smooth.
