Ingredients

  • 1 pound Ground beef
  • 1 large Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 medium head Green cabbage, chopped
  • 28 ounce can Diced tomatoes (with juice)
  • 15 ounce can Tomato sauce
  • 1 cup Beef broth
  • 1 cup White rice, uncooked
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Mozzarella cheese, shredded
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain any excess fat.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes, stirring occasionally, until the onion is softened and fragrant.

Step 4

Transfer the browned beef mixture to a large mixing bowl. Stir in the chopped cabbage, diced tomatoes with their juice, tomato sauce, beef broth, uncooked rice, oregano, thyme, salt, and black pepper. Mix everything together until well combined.

Step 5

Lightly grease a 9x13-inch baking dish. Pour the mixture into the baking dish and spread it out evenly.

Step 6

Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 7

After 45 minutes, remove the foil, sprinkle the shredded mozzarella cheese evenly over the casserole, and return it to the oven.

Step 8

Bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly, and the rice is cooked through.

Step 9

Remove the casserole from the oven and let it rest for 5-10 minutes before serving.

Step 10

Garnish with chopped parsley, if desired, and serve warm. Enjoy!
