Ingredients

  • 2 whole English cucumber
  • 1 whole Red chili (optional, for heat)
  • 1 medium Carrot
  • 1 small Red onion

  • 0.25 cup Rice vinegar
  • 2 tablespoons Lime juice
  • 1 tablespoon Granulated sugar
  • 1 tablespoon Fish sauce
  • 1 teaspoon Soy sauce
  • 0.5 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 1 teaspoon White sesame seeds (optional, for garnish)

Directions

Step 1

Wash and peel the cucumbers. Slice them in half lengthwise, then use a spoon to scrape out the seeds. Slice the cucumbers into thin half-moon shapes and transfer to a large mixing bowl.
