Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cups all-purpose flour
  • 3 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 2 jalapeño peppers, seeded and finely chopped
  • 3 carrots, peeled and sliced into rounds
  • 3 potatoes, peeled and cut into chunks
  • 4 cups beef stock
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons cayenne pepper
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef chunks with salt and black pepper. Dredge them lightly in flour to coat evenly.

Step 2

In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Brown the beef in batches, about 2-3 minutes per side. Remove the beef and set aside.

Step 3

In the same pot, lower the heat to medium and add the diced onion. Sauté for 3-4 minutes until softened, then add the minced garlic and chopped jalapeños. Cook for an additional minute until fragrant.

Step 4

Stir in the carrots and potatoes, cooking for another 2 minutes to slightly soften them.

Step 5

Add the beef back into the pot. Stir in the beef stock, tomato paste, Worcestershire sauce, smoked paprika, cayenne pepper, and bay leaves. Mix well to combine all ingredients.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 90-120 minutes, stirring occasionally, until the beef is tender and the stew has thickened.

Step 7

Taste and adjust seasoning if necessary, adding more salt, pepper, or cayenne for an extra kick.

Step 8

Serve hot, garnished with freshly chopped parsley if desired. Pair with crusty bread or rice for a complete meal.
