Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce
  • 0.5 teaspoon smoked paprika
  • 1 small, finely diced jalapeño pepper
  • 2 strips, finely crumbled crispy bacon
  • 1 teaspoon pickle relish
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, finely chopped fresh chives

Directions

Step 1

Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat, then reduce the heat to a gentle simmer and cook for 10 minutes.

Step 2

While the eggs are cooking, prepare a large bowl of ice water. Once the eggs are done cooking, transfer them immediately into the ice water to cool for about 5 minutes.

Step 3

Gently crack and peel the eggshells off the eggs. Slice each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl. Place the egg whites on a serving platter.

Step 4

Mash the egg yolks with a fork until smooth. Add the mayonnaise, Dijon mustard, hot sauce, smoked paprika, diced jalapeño, crumbled bacon, and pickle relish. Mix until the filling is smooth and well combined.

Step 5

Taste the filling and season with salt and black pepper as needed.

Step 6

Using a piping bag or a small spoon, fill each egg white half with the yolk mixture. Create a slight mound for a decorative look.

Step 7

Sprinkle the tops of the filled eggs with additional smoked paprika and garnish with freshly chopped chives for a pop of color and flavor.

Step 8

Refrigerate the filled eggs for at least 15 minutes before serving to allow the flavors to meld. Serve cold and enjoy the spicy, savory goodness!
