Ingredients

  • 3 large Ripe bananas
  • 113 grams Unsalted butter, melted and slightly cooled
  • 150 grams Granulated sugar
  • 50 grams Brown sugar, packed
  • 2 units Large eggs
  • 2 teaspoons Vanilla extract
  • 250 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 60 milliliters Greek yogurt or sour cream
  • 75 grams Chopped walnuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9x5-inch loaf pan or line it with parchment paper for easy release.

Step 2

In a large mixing bowl, mash the ripe bananas thoroughly using a fork. You should have about 1 to 1 1/4 cups of mashed banana.

Step 3

Add the melted butter, granulated sugar, and brown sugar to the mashed bananas. Stir until well combined.

Step 4

Mix in the eggs, one at a time, followed by the vanilla extract. Continue stirring until smooth.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.

Step 6

Gradually fold the dry ingredients into the wet mixture. Be careful not to overmix; stop when you no longer see large streaks of flour.

Step 7

Stir in the Greek yogurt or sour cream to add moisture to the batter. If you're using add-ins like walnuts or chocolate chips, fold them into the batter at this stage.

Step 8

Pour the batter into the prepared loaf pan, spreading it evenly.

Step 9

Place the pan in the preheated oven and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Begin checking around the 50-minute mark to avoid overbaking.

Step 10

Once baked, remove the banana bread from the oven and let it cool in the pan for about 15 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 11

Serve warm or at room temperature. Store leftovers in an airtight container for up to 4 days, or freeze for longer storage.
