Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 cup Gorgonzola cheese, crumbled
  • 2 cups Fresh spinach leaves (optional)
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Dredge the chicken in the flour, shaking off any excess.

Step 3

In a large skillet over medium heat, heat the olive oil and 1 tablespoon of butter until the butter has melted.

Step 4

Add the chicken breasts to the skillet and cook until golden on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside on a plate.

In the same skillet, melt the remaining 1 tablespoon of butter. Add the minced garlic and cook for 1 minute until fragrant.

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

Reduce the heat to low and stir in the heavy cream. Cook for 2-3 minutes to thicken slightly.

Return the chicken to the skillet, spooning the sauce over the top. Simmer for 5-7 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
